The focus at Simon's Bakery is on making Swiss meringue buttercream and ganache cakes that are are a sensation for the taste buds as well as the eyes.
Swiss meringue buttercream is made by whipping butter into a Swiss meringue base. The result is a lighter, creamier and less sweet buttercream than the grainy American buttercream. Additional flavours (fruit purees, caramel, chocolate etc) or colours can be mixed in to create the exact cake you want.

fun, colourful and delicious bespoke celebration cakes for memorable moments...
They say that size doesn't matter....in certain circumstances that may be the case, but I like my cakes to be tall. By default, the celebration cakes that I make have 4 layers of sponge cake inside which results in a cake approximately 7.5" tall, creating that real wow factor!
The number of layers of sponge inside the cake can be reduced or increased to cater for the correct number of portions, but at a minimum, the celebration cake will normally measure at least 5" in height with 3 layers of cake.
All the celebration and wedding cakes I make are bespoke, so please take a look at the gallery for some inspiration. I work with Swiss meringue buttercream and chocolate ganache rather than fondant and modelling paste. I don't make 'novelty cakes' per se, but can add a modern design twist if you do have something specific in mind. Most of the cakes I make contain eggs, dairy and wheat flour, however, all my celebration cakes can be made gluten and some dairy-free.

OMG! I had a cake made by simon upon recommendation for my sister in laws big 40th! I wanted drippy icing and flowers. The cake certainly did not disappoint, it was absolutely beautiful, the best tasting red velvet you will ever taste!! And i loveeee cake, it had organic edible flowers, glitter, chicolate bark it was better than anything i had imagined. I can not recommend simon enough it was worth every penny, if and when i need a cake made i wont go anywhere else thats for sure!
